Grilled chicken with parmesan wedges

Prep time: 15 mins Cooking time: 50 mins Servings: 2

This recipe is delicious yet easy and quick to make using ingredients you probably already have lying around.

INGREDIENTS FOR CHICKEN 2 Chicken breasts, ½ tsp salt, ½ tsp black pepper, 1 tsp paprika, 1 tsp chilli powder, 1 tsp garlic powder, 1 tbsp olive oil INGREDIENTS FOR PARMESAN WEDGES 2 medium potatoes, ½ tsp salt, ½ tsp black pepper, ½ tsp mixed herbs, ½ tsp paprika, 30g parmesan cheese, 1 tbsp olive oil SIDE 80g tenderstem broccoli

Method

  1. Step 1

    Cut the chicken breast into fillets and marinate with the oil, salt, black pepper, paprika, chilli powder and garlic powder. (Marinate for at least 30 mins)

  2. Step 2

    Cut the potatoes into wedge slices, leaving the skin on. Mix together the oil, salt, black pepper, herbs, paprika and parmesan. Then pour over the potato wedges and mix well.

  3. Step 3

    Place the chicken onto a baking tray and bake for 30-40 minutes, turning half way through.

  4. Step 4

    Place the potato wedges onto a baking sheet, evenly spaced apart and bake for 40 minutes- 50 minutes (depending on thickness of wedges).

  5. Step 5

    Steam the broccoli by placing it in a pan with enough water to cover the bottom of the pan. Let it come to the boil and then simmer with the lid on for 5 minutes until soft. Drain once ready.

  6. Step 6

    Serve altogether.
