The "Love Menu": Valentines day 3-course meal

Roses are red, violets are blue, we have crafted this menu with love for two.

This years Valentines day may be a home occasion, but that doesn't mean it can't be special.

Forget ordering in food this Valentines day, nothing says "I love you" like lovingly preparing a romantic meal for that someone special. We have crafted a simple yet delicious 3-course menu that is guaranteed to impress regardless of your culinary skills. 

The recipes below are for two portions.

 
StarterBaked lemon & garlic salmon
Prep: 10 mins Cooking: 20 mins
INGREDIENTS Salmon, ½ lemon zest, 1/2 lemon juiced, 1tbsp olive oil, 2 garlic cloves minced, ½ tsp black pepper, ½ tsp paprika, ½ tsp oregano, 2 handfuls of mixed salad

Recipe steps

  1. Step 1

    Preheat oven to 190 degrees C.

  2. Step 2

    In a small bowl mix together the lemon zest, lemon juice, olive oil, garlic mince, black pepper, paprika and oregano.

  3. Step 3

    Line a baking tray with foil and place the salmon fillets on top.

  4. Step 4

    Top with the lemon-garlic sauce, cover with foil and bake for 15-20 minutes (depending on the thickness of your salmon) until pink in colour.

  5. Step 5

    Serve with salad.

 

 
MAINChicken tagliatelle with tenderstem broccoli
Prep: 15 mins Cooking: 30 mins
INGREDIENTS 2 Chicken breasts, 1 tsp Paprika, 1tsp Chilli powder, 1 tsp Salt, 1/2 tsp black pepper, 1 tsp Garlic powder, 80 Tenderstem Broccolli, 350g tagliatelle

Recipe steps

  1. Step 1

    Preheat oven to 230 degrees.

  2. Step 2

    Cut the chicken into fillets and season with salt, pepper, paprika, garlic powder and chilli powder.

  3. Step 3

    Line a baking tray with foil and brush with olive oil.

  4. Step 4

    Place the chicken breasts on top and bake for 15-20 minutes until cooked through.

  5. Step 5

    Whilst the chicken is baking, boil the tagliatelle for 7-9 minutes.

  6. Step 6

    Drain the tagliatelle, toss with 2 tbsp olive oil and 1 tsp mixed herbs.

  7. Step 7

    Add the broccoli to a pan with 3 tbsp water and steam on low heat for approximately 5 minutes.

  8. Step 8

    To serve, place the tagliatelle in the centre, top with the chicken breast and place the steamed broccoli on the side.

 

 
DESSERTMini vanilla and chocolate cheesecakes
Prep: 20 mins Set-time: 4 - 24 hours
INGREDIENTS 25g digestive biscuits, 10g butter melted, 100 full fat cream cheese, 20g icing sugar, ½ tsp vanilla extract, 45ml double cream, 30g milk chocolate, 1 strawberry. No baking required

Recipe steps

  1. Step 1

    Line a muffin tin with 2 cupcake liners.

  2. Step 2

    Crush the digestive biscuits into fine crumbs and mix together with the melted butter.

  3. Step 3

    Place half of the mixture into each cupcake liner and press down firmly using the back of a spoon.

  4. Step 4

    Refrigerate for 30 minutes.

  5. Step 5

    Then whisk together the cream cheese, icing sugar and vanilla extract.

  6. Step 6

    In a separate bowl whisk the double cream until soft peaks form.

  7. Step 7

    Fold the double cream with the cream cheese mixture.

  8. Step 8

    Top the cheesecake bases with the filling and refrigerate for a minimum of 4 hours (ideally overnight).

  9. Step 9

    Melt the chocolate over a hot water bath.

  10. Step 10

    Remove the cheesecakes from the cupcake liners and top with the chocolate. Cut a strawberry in half and place on top.

Voilà! You have just lovingly prepared a 3-course meal that is going to have your other-half swooning (Psst don't forget to get a bunch of roses and light the candles).
